Question 125 of 433
Are seed oils toxic? Is saturated fat fine now?

The short answer
No, and no. Seed oils are not poison, and saturated fat still raises LDL cholesterol.
In trials, replacing butter and animal fat with unsaturated plant oils lowers LDL and heart events. The real trouble with seed oils is the company they keep: they are in fried food and packaged snacks. Blame the doughnut, not the canola. Extra-virgin olive oil has the best evidence of any fat and is my default recommendation.
As for the carnivore and butter enthusiasts, I check their ApoB. The numbers usually settle the argument.
